Sugar substitutes are additives used to provide a sweet taste to food products. Unlike natural sucrose, sugar substitutes are absorbed more slowly in the body, don’t create overload for the pancreas, and in moderate amounts, do not cause sharp increases in blood glucose levels. The physiological caloric value of sweeteners compared to sugar is significantly reduced or absent.
